♥ Savvy Savin' Suppers ♥ Or Breakfast (Which ever you like)




I have to admit I snitched this recipe from a friend, Thank You Ree!  I had to!  It was so delicious!  And you know me, anything that I can make ahead and make my life just a little less hectic is a God send.  This recipe is actually intended for Breakfast but my kids have requested it for dinner twice this week.  Remember... I give you the recipe BUT you can make it your own!  For dietary reasons, if you need to substitute and ingredient, please do. Or if you just don't like something in it, by all means, go for it! 

Our Savvy Savin' Supper recipe is Make-Ahead Muffin Melts!

Make-Ahead Muffin Melts

Ingredients

■12 whole Hard-boiled Eggs, Peeled And Chopped

■2 cups Grated Cheddar Cheese

■1 cup (Real) Mayonnaise

■12 slices Bacon, Fried And Crumbled

■1 Tablespoon (heaping) Dijon Mustard

■½ teaspoons Garlic Powder

■3 dashes Worcestershire Sauce

■6 whole English Muffins Split

Preparation Instructions

Combine eggs with all other ingredients. Fold together gently. Cover and store in the fridge overnight.

Spread on English muffin halves, then broil for 3 to 5 minutes or until hot and bubbly. (Don’t set them too close to the heating element.)

Serve immediately!

Start by peeling all the eggs....

Then give em' a rough chop.  ( Depending on your preference, you can chop them a little finer.

Throw all the bacon on a cutting board....

Then Chop it into bits...

Throw the eggs in a bowl

Then throw in the shredded cheese....

Then comes the bacon and a cup of mayonnaise.  Now if you don't like Mayo, don't make a fuss the mayo serves only as a binder and you will not taste it.

A good, heaping spoonful of Dijon... Do not skip this step the recipe will not be the same and it will not bind.

Next comes the garlic powder...

Finally 2 or 3 dashes of Worcestershire Sauce.

Stir mixture slowly to combine all ingredients...

You can actually make this the night before, cover with plastic wrap and go on with your life

Okay, when your ready, just spread the mixture on top of an English muffin half.

You can spread your English muffins the night before, too! Just cover them with plastic wrap and you are good to go!

Throw the muffin halves on a cookie sheet, then broil them for about 3-4 minutes. I put the rack in the middle of the oven or lower.  You want the cheese to melt and get hot and the muffin to slightly crisp before the top overly browns.

Enjoy!  Remember switch up the ingredients to what you have on hand or what's on sale at the market.  The third time I made these I actually used left over biscuits and turkey sausage.  I even spiced mine up with a little cayenne.  It's all up to you.  It's like an omelet, add what you like!  That's the secret to cooking, make it your own and make what you like.  You'll be all the more happier for it!  Oh and if you have leftovers, add your mixture to some white or wheat bread with some lettuce, it makes an awesome egg salad sandwich!
