Today I am going old school, stick to your ribs, comfort food. I love this recipe, one because it's within my $5 and under meals category, two because it's a recipe I can make ahead and either freeze or put in the fridge and pop in the oven when I get home, and three because it's just plain yummy! Paired with either instant or homemade mashed potato's and a vegetable it's still under $5 for all.
♥ Meat Loaf ♥
Ingredients
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper(can be fresh or you can buy the canned tomato's with the bell pepper included)
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice (1/2 Can)
1/2 cup quick-cooking oats
Topping
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping
Mix ingredients for topping and spread on loaf. Bake for 1 hour at 375 degrees F.
