Savvy Savin' Suppers



I was trying to find something simple this week, and with the cool weather approaching us ( and the 10 lb bag of potatoes that are $1.99 at Walmart this week ), something with Potatoes was cooking on my brain.

So,this week's recipe is for:

Potato and Ham Soup

Ingredients:

•2 cups potatoes, peeled & cubed ( $ 1.00 )
•3 tablespoons butter ( $.20 )
•1 small onion, chopped fine ( $ .60 )
•black pepper
•3 cups milk ( $.25 )
•1/2 teaspoon salt
•1 cup cooked, cubed ham ( $ 1.98 )
•1 cup shredded cheddar cheese, (4 ounces)  ( $ .88 )

Preparation:

Cook potatoes in boiling water until tender.
Drain; reserve 1 cup of the liquid.
Melt butter in a saucepan over medium heat.
Add onion; cook, stirring, until tender.
Season with black pepper.
Cook for about 3 more minutes, stirring.
Add potatoes, reserved liquid, milk, and salt; stir well.
Add ham; simmer for 5 minutes, stirring frequently.
Remove from heat and let cool for about 5 minutes. Add cheese; stir until melted.
Serves 3 to 4.

Total : $ 4.91
I had most of this in my stockpile, got the $1.99 10 lb bag and cubed ham from Walmart this week. Everything else has been on sale within the last few weeks. 

This soup is GREAT for cold weather, simple to make on those hectic nights when all you want to do is relax. Also, You can cook a big pot of this and freeze it in ziploc bags, GREAT for one of the " spur of the moment " dinner options .
